Light and healthy beetroot salad with an unusual sauce for supper: we share an original recipe
Beetroot is a very healthy and tasty vegetable that is just perfect for preparing delicious and healthy dishes, such as salads and borscht. It can also be eaten plain, without salt or dressings.
The chef Yevhen Klopotenko shared on his YouTube channel an original recipe for a delicious and light salad that will be a great option for dinner and lunch, based on beets and an unusual dressing (to watch the video, scroll to the end).
Ingredients:
- beets – 2 pcs.
- dried apricots – 75 g
- natural yogurt – 2 tbsp.
- parsley – 2-3 sprigs
- walnuts – 50 g
- pumpkin seeds – 10-15 pcs.
- salt, pepper – to taste
Method of preparation:
1. Wash the beets and wrap them in foil.
2. Transfer to a baking sheet, and bake for 1-1.5 hours, be sure to let it cool and peel, but you can leave the skin on.
3. Cut the beetroot into random pieces and place in a bowl.
4. Wash the parsley and chop it.
5. Cut the dried apricots into strips and chop the walnuts.
6. Transfer all these ingredients to the beets, add the seeds, salt, pepper, and yogurt, and mix.
