Juicy stuffed peppers for a snack: what to add to the minced meat

Stuffed peppers can be a great dish for lunch, dinner, or even a snack. To make them juicy, add raw grated vegetables to the stuffing.
Cook Valentyna shared on Instagram a recipe for a delicious stuffed pepper made with raw vegetables, rice, and minced meat.
Ingredients:
- Rice – 1 small glass
- Minced meat – 600 g (I took chicken, veal will be delicious too)
- Zucchini – 1 medium zucchini
- Carrot – 1 large
- Onion – 1 large
- Garlic – 5 cloves
- Celery – 2 stalks
- Tomatoes in their own juice – 1 jar or 400 g of ordinary tomatoes without skin and chopped
- Cream – 150 g
- Salt, pepper, smoked paprika, bay leaf and favorite spices
Method of preparation:
1. Soak and rinse the rice 5-7 times.
2. Grate all vegetables except onions, chop the onions finely, and mix it all with the washed rice, salt and pepper.
3. Peel the seeds and veins from the peppers.
4. Stuff and place in a baking dish, top with half the tomatoes, and then chopped celery. Mix the remaining tomatoes with the cream, spices and water. You need enough to cover the peppers by half. Cover the dish and bake. Cook for 1 hour and 20 minutes from the boiling point. Make sure it does not boil too much, as a lot of liquid will be released.
