Cook Valentyna shared a recipe for healthy fish meatballs on Instagram that even children will eat.
Ingredients:
- White fish fillet – 700 g
- Onion – 1 medium
- Cilantro and parsley – medium bunch
- Lemon zest – medium
- Garlic – 4 cloves + the same amount for the sauce
- Sweet paprika, turmeric and cumin (the last two are optional)
- Breadcrumbs 4-6 tbsp.
- Salt
- Tomatoes in its juice – 1 can
Method of preparation:
1. Make minced fish from the fish. In a blender or meat grinder. Add finely chopped cilantro and parsley. Add lemon zest and grated garlic and finely chopped onion. Add sweet or smoked paprika, a little turmeric and cumin, add breadcrumbs and salt, and mix until smooth. The minced meat should be dense. Let it stand for ten minutes.
2. Sauce: add salt to the tomatoes to taste and sugar for balance, finely chopped garlic, spices, and a glass of water. Cook for about 10 minutes.
3. Add the formed meatballs to the sauce. Cover and simmer for 15 minutes over medium heat. Stir and simmer for another 5 minutes and turn off. Sprinkle the remaining herbs on top and serve.
