- sugar - 200 g
- flour - 200 g
- baking powder - 10 g
- milk - 40 g
- butter - 35 g
- dry poppy seeds - 50 g
- zest of 1 lemon
Method of preparation:
1. Beat the eggs with sugar and salt for 15 minutes with a hand mixer.
2. Add the sifted flour and baking powder to the eggs. Pour in the hot milk and butter. Stir in the poppy seeds, add the lemon zest and mix.
3. Cover the pan with parchment, pour the batter and bake for 1 hour at 160 degrees without opening the oven.
4. Cool the sponge cake in the mold and then remove the mold.
Be sure to let the sponge cake stabilize overnight in the refrigerator, wrapping it in plastic wrap or a bag beforehand!
