Sponge cakes often fail to be fluffy and tall, and there are several reasons for this, but the main one is the number of eggs. The structure of the cake depends on the number of eggs.
Cook Tati Chudnova shared on Instagram a recipe for a fluffy sponge cake that will turn out to be tall and light.
Ingredients:
- eggs - 1 pc.
- sugar - 30 g
- flour - 21 g
- corn starch - 6 g
- cocoa - 5 g
Tip:
- For an 18 cm mold - 4 eggs
- For a 20 cm baking dish - 6 eggs
- For a 22 cm mold - 8 eggs
Method of preparation:
1. Beat the eggs at room temperature with sugar until fluffy. Beat for 15-20 minutes (depending on the power of the mixer).
2. After that, mix the dry ingredients and sift through a sieve and gradually pour into the lush mass and mix with a silicone spatula. Mix carefully so that the dough does not fall off.
3. Then pour the batter into a mold lined with parchment, or if you have a ring, then with foil. Smooth it out and bake in a preheated 170C oven for 40-45 minutes.
