Homemade safe boiled sausage: what to cook from

Boiled sausage is a product that is often used to make salads and sandwiches. But store-bought sausage can often be dangerous, so it's better to cook it at home, using quality products.

Chef Alex shared a recipe for boiled sausage on Instagram, based on chicken, vegetables, spices, and beet juice.

Ingredients:

  • chicken meat - 200 g
  • one onion
  • one carrot
  • salt, peppercorns, 2 bay leaves, nutmeg, ground coriander, dried garlic
  • 60g of red beet juice
  • 40-50g of milk powder
  • 300+100g of broth
  • 25g of gelatin

Method of preparation:

1. In a saucepan, cook the chicken meat with onions, carrots, spices and bay leaf. Cook for 2 hours. Then strain the broth through a sieve, separate the meat from the bones and cartilage.

2. Squeeze the juice out of the beets and add them to the meat, add 300 ml of broth, dried garlic, nutmeg and ground coriander. The boiled sausage should also contain milk powder.

3. Mix everything into a homogeneous mass, which should look like a delicate puree. Add the swollen gelatin and broth, mix and pour into a convenient mold, you can use a plastic bottle. Chill for 2 hours and you're ready to eat!
