Beetroot salads are the best light dish for a festive table or every day. Beets can be used not only for salads, but also for appetizers, soups, and borscht. It can also be used to make sauces and spreads.

Cook Anna shared on Instagram a recipe for a delicious and healthy beetroot salad with cheese and nuts, which is prepared very quickly.

Ingredients:

  • beets –1 pc.
  • arugula – 1/2 package
  • feta cheese – 50-60 g

Sauce:

  • olive oil – 3 tbsp.
  • French mustard – 1 tsp.
  • honey – 1 tsp.
  • lemon juice – 1 tsp.
  • nuts or seeds

Method of preparation:

1. Bake or boil the beets. Cut into medium pieces.

2. Cut the cheese into large pieces.

3. Sauce: mix olive oil and mustard, add lemon juice, honey, and mix.

4. Put the arugula and beetroot in a dish and pour over the sauce. Sprinkle with nuts or seeds.
