Healthy beet hummus: the perfect addition to borscht, meat and bacon
Beets are an ideal vegetable for making delicious and healthy salads and snacks. For salads, it is better to bake them instead of boiling them, so they will be even healthier and retain their sweet flavor.
The chef shared a recipe for a delicious beetroot appetizer with chickpeas, parsley, and tahini on Instagram.
Ingredients:
- Beets – 1 pc.
- Garlic – 1 pc.
- Boiled chickpeas – 200 g
- Green onions
- Parsley
- Tahini (sesame paste) – 1 tsp.
- Olive oil – 1 tbsp
- Lemon juice – 1 tbsp.
- Salt and pepper – to taste
- Walnuts – 1 tbsp.
Method of preparation:
1. Cut off the top of the beets and garlic, sprinkle with salt and add a drop of oil, wrap in foil.
2. Bake the beets in the oven at 180 C, garlic for 35-40 minutes, beets for 40-90 minutes.
3. Put all the ingredients in a blender bowl and grind.
4. Serve with finely chopped walnuts, parsley, and aromatic olive oil.
