Healthy and quick: chicken fillet with vegetables in a sweet and sour sauce for a hearty lunch
Chicken fillet can be used to make many different tasty, hearty, and yet light dishes, such as cutlets, meatballs, salads, and bread spreads. It is also baked with spices and sauces, fried, dried, boiled, and steamed.
Cook Anastasia Solopii shared a recipe on Instagram for a delicious chicken fillet with vegetables in a sweet and sour sauce for lunch and dinner.
Ingredients:
- chicken fillet – 1 pc.
- carrots – 2 pcs.
- asparagus beans – 100 g
- corn starch – 1 tbsp.
- garlic – 1 clove
- fresh ginger – 15 g
- canned pineapple – 100-150 g
- soy sauce – 2 tbsp
- apple cider vinegar – 1 tbsp.
- sugar – 1 tbsp
- tomatoes in it's juice – 200 g
- tomato paste – 70 g
- oil for frying
- salt
Method of preparation:
1. Cut the fillet into strips or small pieces, season with salt, and roll in 1 tbsp of starch.
2. Fry it in a well-heated frying pan with vegetable oil until golden brown for about 8 minutes.
3. Put the meat on paper to remove excess fat.
4. Cut the carrots into strips and fry over high heat for about 1 minute, add the beans and fry for another 1 minute.
5. Add the diced pineapple, grated ginger, and finely chopped garlic, stir, and cook for another 1 minute.
6. Add the tomatoes, starch or tomato paste, pineapple syrup, vinegar, soy sauce, and sugar, stir and simmer for 2 minutes.
7. Finally, add the meat and simmer for 2-3 minutes and serve.
