Georgian-style zucchini caviar: sharing an unusual recipe for a tasty appetizer for winter

Zucchini caviar is very tasty and easy to prepare. It can be spicier if you add more garlic, spices and tomato paste, while for a more tender version, cooks advise adding sweet peppers, sugar and carrots.

Ingredients:
- Zucchini - 1.5 kg
- Red hot pepper - 100 g
- Bulgarian pepper - 700 g
- Carrots - 500 g
- Celery - 400 g
- Onion - 700 g
- Garlic - 1 head
- Tomato paste - 3 tbsp. l.
- Smoked sweet paprika - 2 tbsp.
- Salt - 3 tsp.
- Sugar - 40 g
- Vegetable oil - 150 ml
- Wine vinegar - 50 g
Method of preparation:
1. Clean and chop all vegetables. Cut carrots into rings, dice onions and fry until golden. Add tomato paste and stew for about 5 minutes. Then add chopped zucchini, pepper, celery and garlic and stew under a lid until ready.
2. Mix the cooked vegetables with a blender, add vinegar, vegetable oil, salt, sugar and smoked paprika, stir and bring to the boil.
3. Pickle the cooked caviar.
