Georgian-style sauerkraut with beet: appetizer recipe from Alik Mkrtchyan
Cabbage can be pickled with carrots, beets, and even apples. To prevent sauerkraut from having a bad odor, it must be cooked properly.
Chef Alik Mkrtchyan shared a recipe for pickled cabbage with beets, spices, and black pepper on Instagram.
Ingredients:
- cabbage - 3 kg
- beets - 0.5 kg
- head of garlic - 1 pc.
- celery leaves or fresh dill - 100 g
- hot pepper - 2 pcs.
- water - 2 liters
- salt - 100 g
- black peppercorns - 10 pcs.
- laurel - 3 pcs.
- allspice peppercorns - 10 pcs.
Method of preparation:
1. Cut cabbage into large pieces and beetroot in circles.
2. Layer, sprinkling with spices.
3. Bring the brine to a boil, pour over the cabbage and leave it warm under the lid for 3 days.
4. After that, put the cabbage in a cool place for 2 days.
