Eggplant salad with cucumbers and tomatoes for winter: recipe for the most delicious and unusual appetizer

Eggplants are an ideal vegetable for preparing delicious salads, as well as caviar, appetizers. And they also go great with other vegetables, such as cucumbers.
FoodOboz editors share a recipe for a delicious salad of eggplant, with cucumbers, tomatoes and peppers for the winter.
Ingredients:
- eggplants - 1.3 kg
- tomato - 1.3 kg
- cucumbers - 1 kg
- sweet pepper - 700 g
- onion - 300 g
- salt - 1 tbsp.
- sugar - 90 g
- sunflower oil - 200 ml
- vinegar - 70 ml
Method of preparation:
1. Cut the eggplants into large chunks. Transfer to a bowl, salt, mix and leave for 10 minutes. Rinse the eggplants.
2. Wash tomatoes, cut them up and put them through a meat grinder or grate them. Pour the mashed tomatoes into a saucepan and put over medium heat, dice the onion, add it, add the pepper cut into small slices.
3. Add the cucumbers, eggplant and bell peppers to the puree as well. Mix everything, bring to a boil, then stew under a lid for 20 minutes, stirring frequently.
4. After salt, add vinegar and vegetable oil. Stir, bring to a boil again, then simmer over medium heat for another 5 minutes.
5. Fill sterilized jars with the salad, canning, invert and wrap until completely cooled.
