Eggplant caviar with peppers, onions and tomatoes in pan: the easiest 15-minute recipe for a delicious appetizer
Vegetable caviar is the best appetizer from budget products for a festive table and for every day. It is very tasty if made of zucchini and eggplants. Garlic and spices will give a spicy flavor to the dish.
- eggplants - 3 pcs.
- bell pepper - 2 pcs.
- carrots - 2 pcs.
- onion - 1 pc.
- tomatoes - 3 pcs.
Method of preparation:
1. Wash eggplants, prick with a fork and bake until ready.
2. Dice the onion, fry until golden along with the grated carrot. Add the sliced peppers and stew for 5 minutes.
3. Peel the baked eggplants, cut into cubes and add to all the vegetables. Add grated tomatoes, stew for a few more minutes and add spices to taste.
