Easier than pie and pancakes: healthy zucchini muffins in 15 minutes

Zucchini is not only budget but also very useful vegetable that can be the basis for cooking fritters, pancakes, pies and casseroles, as well as chebureks and muffins.
The recipe for a delicious and healthy dish was published on the page "borzhemsky_healthy_food" on Instagram.
Ingredients:
- zucchini - 300 g
- flour - 250 g
- milk - 200 ml
- eggs - 1 pc.
- leavening agent - 2 tsp.
- cinnamon, nutmeg, ground cloves
- olive oil
- salt, stevia
- herbs
Method of preparation:
1. Sift the flour with salt, baking powder and spices, add stevia and mix the dry ingredients well.
2. Beat the egg lightly in another bowl, add the milk and a drop of olive oil. Mix.
3. Peel and grate the zucchini, squeeze out the excess juice and drain. Add it to the egg mixture and mix. Then pour the liquid part into the dry part and combine quickly and gently, adding chopped herbs and mixing again.
4. Pour the finished dough into molds and bake for 15-20 minutes at 200 C.
