Ingredients:
- Cottage cheese 9% - 500 g
- Egg yolks - 2 pcs.
- Butter - 100 g
- Sour cream - 100 g
- Sugar - 80 g
- Vanilla sugar - 20 g
- Zest of 1/2-1/3 of a small orange (lemon)
- Dried apricots - 150 g
Method of preparation:
1. Grind the cottage cheese with a blender or rub it through a sieve. Grate the zest of half an orange (lemon), only the orange (yellow) part.
2. Add the egg yolks, butter, sour cream, sugar, vanilla sugar, and zest to the cottage cheese. Grind everything again until smooth in a blender.
3. Warm the mass in a water bath or in a saucepan over medium heat, without letting it boil. The mass will become more liquid, which is quite normal. Let it cool slightly and add the finely chopped dried apricots.
4. Cover the mold with 2 layers of cheesecloth, put the curd mass in it, put the mold in a bowl where the excess liquid will drain. Place a small weight on top. Leave in the refrigerator for 24 hours.
Transfer the Easter cake to a serving dish and garnish!
