Delicious Basque cheesecake

Ingredients:

  • biscuits – 200 g
  • butter – 100 g

Curd cream:

  • cream cheese – 400 g
  • cream – 350 ml

  • powdered sugar – 150 g
  • lemon juice (from one lemon)
  • gelatin – 10 g

Kiwi layer:

  • kiwi – 1 kg

  • gelatin – 20 g

Method of preparation:

1. Grind the biscuits into fine crumbs.

2. Put the butter at room temperature and mix.

3. Line a 24-cm-diameter baking dish with baking paper.

5. Whip the cream and powdered sugar until thick.

6. Pour 10 g of gelatin with a little warm water and leave to swell for 20 minutes.

7. Put the prepared gelatin into the cream cheese and pour the lemon juice, mix well.

8. Then add whipped cream to the cottage cheese and jelly mixture and mix well.

9. Put the jelly mixture on the cookies and refrigerate for 2 hours.

10. Peel and grind the kiwi in a blender until puree, add sugar and mix well.

11. Gelatin (20 g), pour a little warm water and leave to swell for 20 minutes.

14. Then put the gelatin into the kiwi and mix well.

15. Then pour the kiwi jelly over the curd cream and refrigerate for a few hours.
