Better than vinaigrette: healthy vegetable salad in 20 minutes
If you want to make a delicious salad with seasonal vegetables, but you're tired of vinaigrette, just experiment and add new ingredients to the dish. You can also use beets as a simple base and combine them with cheese or fruit.
Chef Yevhen Klopotenko shared a recipe for a delicious baked beet salad with cheese and pear on his website, which is very easy to prepare.
Ingredients:
- Beets - (2-3 small beets)
- Pear - 300 g
- Feta - 150 g
- Mint - 2 sprigs
- Lemon juice - 1 tsp.
- Olive oil - 1 tbsp.
- Salt, pepper - to taste
Method of preparation:
1. Wash the beets, make a few holes, and wrap them in foil, put them in the oven preheated to 180 C for one and a half to two hours. Then remove from the oven and let cool.
2. Peel the beets and cut them into small cubes.
3. Be sure to core the pear and cut it into cubes.
4. Dice the cheese.
5. Tear the mint leaves from the stems and tear them with your hands.
6. Then put all the ingredients in a salad bowl, season with salt and pepper, lemon juice, and olive oil and mix thoroughly.
