Soup is an ideal option for a light lunch or dinner. You can make soups from different products, but it is better to add more greens and seasonal vegetables. It will also be delicious with fish, chicken, and seafood.
Cook Olga Matviy shared a recipe for a delicious, light chicken soup with fried noodles on her YouTube channel.
Ingredients:
- Chicken legs - 8-9 pcs.
- Potatoes - 2 pcs.
- Onion - 1 pc.
- Carrots - 1 pc.
- Celery - 1 slice
- Bay leaf, pepper, dried herbs, salt - to taste
- Noodles or small pasta - 120 g
- Water - 5-6 liters
Method of preparation:
1. Put chicken legs, spices and onions in boiling water. Make sure to skim off the foam.
2. Remove the vegetables, meat from the prepared broth, strain the broth through cheesecloth to make the soup clear, pour it into a saucepan and bring it back to a boil.
3. Cut the potatoes into small cubes and add them to the boiling broth, followed by the carrots. Then cut the meat into pieces and spice to taste.
4. Add the butter.
5. Fry the pasta in a dry frying pan and add to the soup, bring to a boil.
Serve the soup hot and sprinkle with herbs!
