Add this to the batter to make puffy and light pancakes

Homemade pancakes can be an alternative to bread and pies. They can be eaten with soups and salads. The most important thing is to make a successful batter so that pancakes are puffy and light.
Cook Victoria shared on Instagram a recipe for delicious, light and puffy pancakes which are prepared with kefir.
Ingredients:
- kefir - 0.5 liters
- eggs - 1 pc.
- sugar - 1-1,5 tbsp.
- salt - 1/3 tsp.
- baking soda - 1/3 tsp.
- flour - 350 g
Method of preparation:
1. Pour room temperature kefir into a bowl, add egg, sugar and salt and mix everything thoroughly with a whisk.
2. Sift the flour, mix a little and add baking soda. Make a thick batter. Leave for 20-30 minutes. If kefir is from refrigerator, then for 30-40 minutes. Do not stir it after.
3- Heat the oil well over low or medium heat, spoon the batter into the frying pan and fry pancakes on both sides. Do not cover with the lid during frying!
Serve pancakes with jam, honey, pate or spread.
