Ingredients for making cookies

• Sugar - 150 gr
• Large lemon zest - 1 pc
• Vanilla sugar - 5 gr
• Lemon juice - 35 ml
• Eggs - 2 pcs
• Flour - 250-260 g
• Baking powder - 10 g
• Powdered sugar

Ingredients for lemon curd

• Egg - 1 pc
• Sugar - 60 gr
• Lemon juice - 60 ml
• Lemon zest - 1 pc
• Butter - 50 gr

Method of preparation

1. Mix soft butter with zest, juice, sugar and egg.

2. Beat well with a paddle attachment and add flour and baking powder.

3. Knead the dough. It should be soft enough. Put it in the refrigerator for at least 30 minutes, but preferably overnight.

4. To prepare the curd, simply mix all the ingredients with a whisk, bring to a boil and cool.

5. Take the dough out of the refrigerator and roll it into balls, each of which should weigh about 20 grams. Roll each ball in powdered sugar.

6. Place the balls on a baking sheet at a distance from each other and make small indentations.

7. Add the lemon curd to the depressions and put the cookies in the oven, preheated to 175 degrees for 8-10 minutes.

8. Instead of lemon curd, you can use any jam to taste, or add nothing at all.
