Snickers cheesecake: a simple recipe from available ingredients

Ingredients

• coffee biscuits - 300 g
• cocoa - 40 gr
• soft butter - 60 gr
• milk - 60 ml
• cream cheese - 400 gr
• cottage cheese - 400 g
• cream 33% - 150 ml
• sugar - 150 g
• vanilla - to taste
• salt - a pinch
• eggs - 3 pcs

Ingredients for caramel

• sugar - 200 gr
• cream 33% - 200 ml
• salted peanuts - 150 g

How to cook

1. Turn on the oven to 130 degrees. Put a container of water on the bottom to create steam. It is important that all the ingredients used to make this cheesecake are at room temperature.

2. Grind cookies into crumbs, add cocoa, soft butter, and milk and mix well.

3. Cover the mold with parchment. Do not grease the sides and bottom. Form the sides and bottom of the cake, pressing the cookies well.

4. While the cake is cooling, prepare cottage cheese mixture. Whisk eggs and beat cottage cheese with a blender. Add whipped cottage cheese, cream, sugar, vanilla, a pinch of salt to cream cheese. Add eggs and mix again.

5. Pour the curd mixture onto the cookies and bake the cheesecake in a water bath for 1.5 hours. Turn off the oven and open the door slightly. Leave to cool for 2 hours.

6. Prepare caramel. Melt sugar in a saucepan and wait until it turns amber. Do not stir, just press it to the bottom of the pan or a thick-bottomed saucepan with a spatula.

7. Turn off the heat and pour in the hot cream, stirring gently until completely combined. Cool the finished caramel.

8. Combine the caramel with salted peanuts and spread it on the cheesecake.
