The culinary history of Ukraine is quite rich and diverse. We have inherited many recipes that our ancestors used to cook. It is important to preserve ancient traditions and not to forget the dishes that saved us from hunger in difficult times.
One of these dishes is Vereshchaka. Food blogger Yevheniia Havryshenko shared what it is and how to make it on Instagram.

Ingredients
- Pork ribs
- Salt
- Pepper
- Garlic
- Oregano
- Beetroot kvass
Ingredients for beetroot kvass
- Beetroot
- Sugar
- Water
Ingredients for the gravy
- Beetroot kvass
- Butter
- Flour
- Salt
Method of preparation
1. Prepare the beet kvass. Cut the beets into cubes in a jar.

2. Pour in water and add 1 tbsp of sugar. Stir.
3. Cover with cheesecloth and leave for 3-4 days.
4. Prepare the heather. Rub the pork ribs with spices and fry in a pan until golden brown.

5. Put in a baking dish and pour beet kvass over it.
6. Bake for an hour at 180 degrees.
7. Prepare the gravy. Pour the kvass into the pan, add salt, butter and flour. Mix thoroughly.

8. Stirring constantly over low heat, cook the gravy until it thickens.
9. Put the ribs on a plate, add the gravy and serve.
