Traditional Ukrainian donuts for Christmas in a new way: how to cook in a modern way

Pampukhs (donuts) are a traditional Ukrainian dish served at Christmas. They have been cooked for centuries, but every year the recipes become more sophisticated, and the pampukhs become softer and tastier.

Food blogger Valeriia Veligura shared on Instagram how to make traditional Ukrainian pampukhs in a new way. They will have an unusually beautiful color, taste, and will definitely appeal to everyone.

Ingredients for dough for 25 pieces

  • Fresh yeast - 30 grams or 15 grams of dry yeast
  • Milk - 250 ml
  • Flour - 40 gr
  • Sugar - 10 grams

Ingredients for the dough

  • Eggs - 1 pc
  • Sugar - 40 gr
  • Vanilla sugar - 10 gr
  • Salt - a pinch
  • Butter - 50 gr
  • Orange zest - 1 pc
  • Flour - 400-425 g

Ingredients for the jam

  • Peeled tangerines - 500 g
  • Sugar - 250 g
  • Agar-agar - 8 gr
  • Orange juice - 1 pc
  • Orange zest - 1 pc

Ingredients for the glaze

  • Powdered sugar - 150 gr
  • Butter - 10 ml
  • Matcha tea - 1 tsp
  • Milk - 30-50 ml

The way of preparation

1.Prepare the dough. Combine warm milk, flour, sugar and yeast. Cover with a towel and leave in a warm place for 20 minutes.

2. Prepare the dough. Combine the egg, sugar, vanilla sugar, salt, melted butter, and zest. Add the dough and mix.

3. Gradually sift in the flour and knead a soft, elastic dough that will stick to your hands just a little.

4. Cover with foil, a towel and leave in a warm place for 1 hour.

5. Knead the dough and form 25 balls. Leave in a warm place under a towel for another 20 minutes.

6. Heat the oil to 175-180 degrees. Dip the dough and fry for 3-4 minutes, turning occasionally. Put the finished donuts on a paper towel and let them cool. ⠀

7. Prepare the jam. Combine the sugar with agar-agar, add to the peeled and sliced tangerines, along with the juice and zest of an orange.

8. Bring to a boil and stir for 7-8 minutes. Let it cool down. ⠀

9. Prepare the icing. Combine powdered sugar, butter, matcha and milk.

10. Make a hole in the finished pampukhs, fill with jam, cover with icing and decorate. Let them harden.
