Bulgur is a very budget-friendly and versatile celeral. It is also delicious. Thus, the product is perfect for a hearty lunch - you only need a few vegetables and spices.

Ingredients:

  • bulgur - 500 g
  • onion - 1 large
  • bell pepper - 2 pcs (can be fresh or frozen)
  • tomatoes - 2 pcs (fresh, sterilized or frozen)
  • tomato paste - 2 tbsp
  • oil - 3-4 tbsp
  • salt - 2 tsp
  • cumin - 2 tsp
  • barberries - a handful
  • broth (vegetable or chicken) - 1 liter (can be replaced with a broth cube or vegetable mix seasoning)
  • greens (parsley, dill) - for serving

1. Rinse the bulgur under cold water and drain the excess liquid.

2. Dice the onion.

Add the rest of the vegetables.

3. Peel the bell pepper and cut it into strips or cubes.

4. Cut the tomatoes into small pieces.

Add spices.

5. If you are using frozen or sterilized tomatoes, drain off any excess liquid first.

6. Heat the oil in a large skillet or pot.

7. Add the chopped onion and sauté over medium heat until transparent.

8. Add the bell pepper and continue frying for another 3-5 minutes.

9. Add the chopped tomatoes, stir and simmer for 5 minutes until the vegetables are tender.

10. Add the tomato paste, mix well and simmer for another 2 minutes.

Add broth.

11. Pour the bulgur into the pan.

12. Stir to coat the bulgur evenly with the vegetable mixture.

13. Add salt, cumin and barberries.

Add greens.

14. Add broth and bring to a boil.

15. Reduce heat to low, cover and cook for 20-25 minutes until bulgur absorbs all the liquid. Check periodically to make sure it doesn't burn.

16. Transfer to a heatproof dish. Pour in the broth and cover with a lid or foil. Bake at 180°C for 30-40 minutes.

17. Leave the finished dish under the lid for 5-10 minutes. Garnish with chopped greens before serving.
