Hearty salad with chicken liver, vegetables and pomegranate: a dish for a festive table and for every day

Salad with liver is a very nutritious dish for which you need a minimal amount of ingredients. All of them are very simple and budget-friendly. A variety of vegetables and pomegranate seeds go well with the meat.
The idea of preparing a light salad with liver and vegetables was published on the Instagram page of food blogger Kateryna Movchan. For the dressing, use regular olive oil.

Ingredients:
- arugula - 100 g
- chicken liver - 450 g
- grains of half a pomegranate
- cherry tomatoes - 200 g
- red onion - half
- oil - 2 tbsp
- salt and pepper - to taste
Method of preparation:

1. Wash the liver well, cut off the films and fat, and cut it into small pieces.
2. Heat a small amount of oil in a frying pan and fry the liver on both sides until cooked (about 5-6 minutes).
3. Then add salt and pepper to taste, stir, and turn off.
4. While the liver is frying, prepare the rest of the ingredients: remove the seeds from half a pomegranate, chop the onion into thin feathers, and halve the cherry tomatoes.
5. Assemble the salad: put the arugula on a salad plate.
6. Put onions and tomatoes on the arugula and pour oil on top.
7. Then add the slightly cooled liver and pomegranate seeds.
