Fluffy citrus pie: the perfect pastry for cozy family tea parties
Homemade pie is an ideal budget dessert for family tea parties on cozy winter evenings. Juicy seasonal citrus fruits can be used to make this delicacy. They will add a rich flavor and pleasant aroma.
Food blogger Yana with the nickname gordynovskaya shared how to make a fluffy citrus pie on Instagram. It is based on delicate shortbread dough.
Ingredients for the dough:
- eggs - 2 pcs
- sugar - 50 g + a pinch of salt
- butter - 100 g
- flour - 260 g
- baking powder - 10 g
Ingredients for the filling:
- lemon - 2 pcs
- orange - 2 pcs
- sugar - 50 g
- corn starch - 50 g
Method of preparation of the filling:
1. Zest one lemon and one orange and set aside.
2. Peel all the citrus fruits and cut the flesh into slices.
3. Beat the citrus fruits in a blender.
4. Pour the citrus smoothie into a saucepan, add sugar and bring to a boil, stirring constantly.
5. Add the zest, stir and remove from the heat. Let cool slightly.
6. Dissolve the starch in 60 ml of warm water and add to the filling.
7. Stirring, cook for another 3 minutes until the mixture thickens. After cooling, the filling will become even thicker.
Method of preparation of the dough:
1. Mix eggs with sugar until smooth.
2. Add melted butter and stir.
3. Mix flour with baking powder and gradually add it to the egg mixture.
4. Divide the dough: Put 1/3 in the freezer and the rest in the refrigerator, wrapping both parts in plastic bags.
How to form the cake:
1. Lay out the refrigerated dough in a mold, paying special attention to the sides.
2. Top with the filling.
3. Grate the dough from the freezer on a coarse grater.
4. Bake at 180°C for 30 minutes.
5. Let the cake cool slightly before slicing - the filling will become elastic, resembling souffle. This pie is perfect for a festive table or tea party with loved ones.
