Crispy and very juicy Uzbek samsa: how to prepare puff pastry pies at home

Samsa is a small pie of various shapes that came to us from Uzbek cuisine. It is made with puff pastry, which gives it a special flavor.

On Instagram, food blogger Yulia Senych told us how to make samsa on our own so that everyone would definitely like it. She also showed how to make puff pastry so that the samsa is perfect.

Ingredients

  • flour - 500 g
  • water - 250 ml
  • salt - 1 tsp
  • butter - 80 g

Ingredients for the filling

  • meat - 500 g
  • onion - 350 g
  • salt - 1 tsp
  • black pepper
  • chili pepper
  • cumin
  • lard

Ingredients for the greasing

  • sesame seeds
  • egg yolk

Method of preparation

1. Add salt to the sifted flour and pour in room temperature water

2. Knead a stiff dough. Wrap it in cling film and leave it to rest for 20-30 minutes.

3. Cut the meat into pieces of about 1 cm.

4. Chop the onion very finely. Add your favorite spices and mix well.

5. Divide the dough into 2 parts. Put one part under a towel and roll out the other into a 1 cm thick rectangle.

6. Brush the dough with softened butter and roll it up.

7. Cut into eight pieces and press each one with the palm of your hand along the cut.

8. Put the resulting pieces in the freezer for 20-30 minutes to freeze the butter. Repeat the same steps with the other piece of dough.

9. Roll out each piece of dough to a diameter of ~15 cm. Put a full tablespoon of the filling on top and pinch the edges.

10. Put the pies on parchment, brush with egg yolk and sprinkle with sesame seeds.

11. Bake at 180 degrees for 35-45 minutes.
