Transcarpathian kalach with ground nuts: mother's recipe for your treasury
The Transcarpathian region of our country is famous for its cuisine. Many legendary main dishes, such as banosh and bohrach, originated there.
In addition to these, Transcarpathian housewives are skilled at making kalachs. They use ground nuts as a filling, which gives the dish a unique flavor. Food blogger Myroslava Pekariuk shared how to make such a kalach on Instagram.
Ingredients for the dough:
- Flour - 600 gr
- Egg - 1 pc
- Butter - 125 gr
- Milk - 250 ml
- Pressed yeast - 25 g
- Sugar - 3 tbsp
Ingredients for the filling:
- Ground walnuts - 600 gr
- Milk - 500 ml
- Sugar - 3 tbsp
- Vanilla sugar - 1 pack.
- Butter - 1 tbsp
- Lemon zest - 1 pc
Method of preparation.
1. Prepare the dough. Pour warm milk into a bowl, add yeast and sugar, mix until smooth, cover the dough with cling film, and leave in a warm place for 20 minutes.
2. Sift the flour into a deep bowl, add one egg, butter, and the dough (which has risen with a cap), knead the soft dough, cover with a towel, and put it in a warm place to proof for 1 hour.
3. Prepare the filling. Bring the milk to a boil, add regular and vanilla sugar, butter, and ground nuts, steam the mixture for a few minutes, and add the lemon zest.
4. Divide the risen dough into three parts, roll out a thin layer, add the chilled filling, and roll up the loaf.
5. Brush the cakes with egg yolk and bake in the oven at 170 degrees for 40-45 minutes.
