The perfect dough for mochi: how to prepare the popular Japanese dessert yourself to make it better than in cafes
Mochi is a traditional Japanese dessert. The main highlight of the dish is the extremely delicate, elastic dough made from rice flour.
You can choose the filling for this dessert according to your own taste preferences, but you need to know how to make the dough correctly. Food blogger Olena Pavlenko shared how to make the perfect mochi dough on Instagram.
Ingredients for 9 pieces of 28 grams each
- rice flour - 86 g
- sugar - 53 g
- salt - 1 g.
- starch - 6 g
- water - 75 ml
- milk - 75 ml
- oil - 6 ml
Method of preparation
1. Combine all the ingredients in a deep bowl.
2. Mix thoroughly and add coloring to taste.
3. Strain through a sieve and cover with cling film, making several holes in it.
4. Put the dough in the microwave for 1 minute. Take it out, stir it, and put it back in for another 1 minute. The total amount of time in the microwave is 3.5 minutes.
5. Knead the cold dough with your hands and form mochi pieces.
