Ingredients
- Duck - 2-3 kg
Ingredients for the brine solution

- Orange juice - 150 ml
- Soy sauce - 100 ml
- Honey - 2 tsp
- Garlic - 2 cloves

- Thyme - optional
Method of preparation
1. Cut off the top of the wings, neck and coccygeal gland from the duck.
2. Dissolve salt in water and add spices.
3. Put the duck in the water, cover and leave it in a cold place for 10-48 hours (longer is better).
4. Then remove the duck and dry it well with paper towels.
5. Mix the zest, juice, soy sauce, garlic, honey and black pepper.
6. Cut apples and orange into large slices and stuff the duck with them. If desired, add prunes and thyme.
7. Put in a baking dish (always with a lid) or in a sleeve. Lubricate thoroughly with the marinade on all sides, add the rest to the mold.
8. Cover and bake at 220C° for 20 minutes. Then reduce the temperature to 180C° and bake for another 2-2.5 hours.
9. During the baking process, remove the duck several times and pour the juice that has formed. At the end of cooking, remove the lid or cut the sleeve to form an appetizing crust).
