Poltava cabbage soup: how to prepare an authentic first course
One of the most popular first courses in Ukraine is cabbage soup or kapusniak. Each region of the country has its own way of preparing it, just like borscht.
Food blogger Tetiana Yushyna shared how cabbage soup is made in Poltava region on Instagram. It is delicious, nutritious, and tastes incredible.
Ingredients.
- meat - 500-600 g
- sauerkraut - 400 g
- potatoes - 4-5 pcs
- millet - 4 tbsp
- onion - 1 pc
- carrots - 2 pcs
- tomatoes in the v\s - 300-400 g
- salt
- sugar
- pepper
- bay leaf
Method of preparation
1. Cook the broth. Remove the meat and leave to cool.
2. Squeeze sauerkraut to remove liquid and chop finely. Put in the boiling broth. Cook for 20 minutes.
3. Add the whole peeled potatoes.
4. Soak millet in boiling water. Rinse it off. Add to the soup. Cook all together for 30 minutes.
5. Take out the potatoes, mash them and put them back in the pot.
6. Fry the finely grated carrots and diced onions in a pan.
7. Add the tomatoes, salt, pepper, and sugar while the roast is cooking. Simmer for 15 minutes.
8. Add the vegetable roast to the cabbage soup. Cook over low heat for another 15-30 minutes.
9. Season the soup with salt, pepper, and bay leaf to taste.
