Stirring the batter too much

When preparing the base, you often want to make it perfectly smooth, but this can ruin the dish. Intensive mixing develops gluten in flour, which makes the sponge cake dense and rubbery. It is better to mix the ingredients with a spatula in smooth movements.

Incorrect oven temperature

Baking a sponge cake at too low or high a temperature can cause it to settle or rise unevenly. The optimal temperature is 170-180°C. Also, do not open the oven earlier than 30 minutes after the start of baking, otherwise the sponge cake may fall due to a sudden change in temperature.

Unprepared baking dish
