Liuliak meat pies: how to prepare a traditional dish of Lozivska Kharkiv region community

Liulia, liuliaka, or liuliak is a traditional pastry that has become legendary among the local population of Lozivska community in Kharkiv region. It tastes so incredible that even those who have never been to that region of Ukraine should try it.

The Instagram page smachni_receptu_blogeriv showed how to make the meat pies. It turns out that they are prepared easily.

Ingredients for the dough

  • flour - 330-360 g
  • mixture of milk and water 50/50 - 235 ml
  • dry yeast - 4 g
  • sugar - ½ tbsp
  • salt - ½ tsp
  • oil - 15 ml

Ingredients for the filling

  • minced meat - 200 g
  • onion - 170 g
  • water/milk - 2-3 tbsp
  • salt
  • pepper
  • greens

Additional ingredients

  • oil for frying

Method of preparation

1. Make a well in the sifted flour and add yeast, sugar and salt. Pour in a mixture of milk and water (you can use either milk or water only) and oil.

2. Knead the dough for 5-7 minutes and transfer it to a greased bowl. The dough will be sticky, but do not add more flour - it is better to grease your hands with oil. Leave it for 1.5-2 hours to rise (you can put it in the fridge overnight and fry it tomorrow).

3. Finely chop the onion, beat it in a blender and add to the minced meat. Add 2-4 tbsp of water or milk to make the pies even juicier.

4. Put the dough on a surface greased with vegetable oil, knead and make balls. Then make sausages, flatten them, put 1.5 tbsp of the filling on top, roll up and pinch. Leave for some time.

5. Heat the oil well.

6. Put the pies seam side down and fry until cooked for 5-7 minutes on each side.
