How to make the usual olivier salad even tastier: everyone will like it
It's hard to imagine a New Year's celebration without the iconic olivier salad. This dish has already become a favorite for generations. And to make the usual recipe even more delicious, you should use the following technology.
Food blogger Maksym with the nickname nekuhar shared the secrets of making delicious olivier for the New Year on Instagram. The chef advises buying homemade chicken for the salad and using homemade mayonnaise.
Ingredients:
- chicken fillets - 2 pcs.
- medium carrots - 2 pcs.
- medium potatoes - 2 pcs.
- eggs - 6 pcs.
- pickled cucumbers - 6 pcs.
- fresh cucumbers - 6 pcs.
- onion (blue) - 1 pc.
- green peas (frozen or canned) - 1 can.
- capers - a small handful
- salt and black pepper - to taste
Method of preparation:
1. Wash the carrots and potatoes, wrap each vegetable in foil.
2. Bake them in the oven at 180 degrees for 45 minutes.
3. Put the chicken fillets in a baking dish, brush with olive or sunflower oil.
4. Cover with foil and bake with the vegetables for 30 minutes.
5. Remove the foil from the chicken, pour the juice from the baking dish over it, and put it in the grill mode for 15 minutes to get a golden brown.
6. Take out the baked vegetables and chicken and let them cool.
7. If possible, chill in the refrigerator for easy cutting.
8. Peel the vegetables from the skin.
9. Cut all the ingredients into small cubes: vegetables, eggs, chicken, pickled and fresh cucumbers, onions.
10. Mix all the ingredients in a large bowl.
11. Before serving, put the salad on a serving plate, add homemade mayonnaise, a pinch of salt and black pepper.
Recipe for homemade mayonnaise
1. Beat 1 egg in a glass jar.
2. Add 1 tbsp of mustard, a few drops of lemon juice, a pinch of salt and sugar.
3. Beat with a blender, gradually adding oil (olive or sunflower) until the mixture becomes thick, like sour cream.
Tips for making olivier
1. Bake instead of boiling. Baking vegetables and meat in the oven retains more flavor and makes the texture of the dish richer.
2. Use farm chicken. Fillets with skin when baked give juiciness and add flavor to the finished dish.
3. Observe the proportions.
4. A proven balance of ingredients is the key to the classic taste of olivier. Add frozen peas, which have a more delicate flavor and pleasant texture than canned peas.
5. Chop finely. The finer the chop, the more harmonious the flavors.
6. Add salt and pepper before serving. This will keep the dish fresh, and the spices will be evenly distributed in the finished portion.
