How to make the perfect creme brulee: exact proportions and step-by-step recipe
Crème brulee is a French dessert made from baked custard with a caramel crust. It is served in portioned earthenware molds and looks very beautiful.
Chef Olha Martynovska shares how to make creme brulee to perfection on Instagram. She claims that if you haven't had a chance to visit Paris yet, you can make a piece of it at home.
Ingredients for 4 150 ml bowls:
- Cream 30% - 350 ml
- Milk 3,2% - 100 ml
- Egg yolks - 7-8 pcs
- Sugar - 80 gr
- Vanilla stick
- Brown sugar - 40 g
The method of preparation:
1. Heat the milk, cream, and vanilla in a saucepan on the stove to 80-90 degrees and leave to brew a little so that the vanilla flavor is maximized.
2. Beat the egg yolks with the white sugar in a bowl with a whisk.
3. Pour the milk mixture into the yolks, stir, pass through a sieve, and portion into bowls.
4. Pour hot water (90-100 degrees) into a baking sheet or baking dish up to halfway.
5. Preheat the oven to 110 degrees with convection and bake for 30-35 minutes. Without convection – 50-55 minutes.
6. Chill the cream well, preferably overnight in the refrigerator.
7. Sprinkle with cane sugar and burn with a kitchen burner before serving.
