How to cook dishes with agar-agar properly: expert shares tips and proportions
Agar-agar, or simply agar, is a jelly-like substance derived from marine red algae. It is an excellent vegan substitute for gelatin, which is known to be made from animal bones and skin.
It is used to make marmalade, marshmallows, bird's milk, marshmallows, etc. Chef Kateryna Peskova shared how to use it correctly on Instagram.
Ingredients
- fruit puree - 158 g
- sugar - 13 g
- agar-agar - 2.2 g
Method of preparation
1. Mix sugar with agar-agar.
2. Heat the liquid to 40° and pour the mixture into it. Bring everything to a boil.
3. Agar is very fragile, so be careful when handling the jelly.
4. To prepare a light texture, beat the frozen agar with a blender.
5. Add more fruit puree to the jelly and beat everything together. The consistency is regulated by the amount of puree.
