Jellied tongue is a traditional Ukrainian dish that ranks far and away among the most popular appetizers for any festive table. Therefore, it is very important to know how to cook this dish correctly, because it often receives special attention.

A food blogger with the nickname trokhlib liliya shared how to make a filled tongue on TikTok. Following her recipe, the tongue will never turn out to be tight and will harden quickly.

Ingredients

  • Beef tongue – 1.3 kg
  • Onions – 2 pcs
  • Black pepper with peas
  • Allspice pepper
  • Bay leaf
  • Salt
  • Chicken fillet – for the broth
  • Gelatin 3 tsp for 750 ml of broth

Method of preparation

1. Rinse the tongue and put it in a saucepan with peppers, salt, onion, and bay leaf. Cook for 3 hours.

2. Transfer the hot tongue to a container of cold water and clean it.

3. Put the tongue in the refrigerator for at least 2 hours.

4. Boil the chicken fillet for the broth. You can cook it in advance and keep it in the refrigerator to make it clear. Strain the finished broth through cheesecloth.

5. Add the melted gelatin to the broth and heat without boiling.

6. Cut the tongue and put it on a plate. Garnish.

7. Pour in the broth and refrigerate until completely frozen.
