Duck with halušky: how to cook a nutritious and tasty dish for lunch
Halušky is a dish consisting of boiled dough without any filling. They can be served separately, for example, with sour cream or mushroom sauce. Or they can even be added to borscht. In addition, halušky are very well combined with other ingredients and become part of a separate dish.
Food blogger Volodymyr Yaroslavsky followed the latter principle. He posted a recipe for duck with halušky on Instagram. According to him, this dish contains a piece of Poltava's soul.
Ingredients
- Whole duck - 1 pc
- Onion - 3 pieces
- Carrots - 3 pcs
- Oil - 1 pint
- Salt
- Black pepper
- Oregano
- Paprika - 1 tbsp
- Water - 2 liters
- White wine - 270 ml
- Kefir 2.5% - 270 ml
- Flour - 500 gr
- Egg - 1 pc
- Soda - 1 tsp.
Method of preparation
1. Cut the duck into 8-12 pieces with the bones.
2. Heat a cauldron or a pan with a thick bottom. Add oil and fry the duck pieces until golden brown.
3. Add the carrots and onions. Fry together with the duck, add salt, spices, paprika, water and white wine.
4. Simmer over low heat until the duck is tender. About 1 hour.
5. Prepare the dough for the halušky. Mix kefir, salt, and egg in a large bowl, add flour and baking soda. Knead the dough quickly.
6. Let the dough stand for 20 minutes and cut the halušky.
7. When the duck is cooked, there should be a lot of rich soup in the pot. Put the halušky in it and simmer for 3 minutes.
8. Add herbs before serving.
