Don't throw it away: what you can cook with yesterday's buckwheat

Quite often, buckwheat cooked as a side dish goes uneaten. But the next day, its taste won't be as good, so you should think about using the buckwheat you've already prepared to make another dish.

Food blogger Myroslava Pekariuk knows exactly what to cook with yesterday's buckwheat. On Instagram, she shared a recipe for delicious pancakes with meat filling.

Ingredients for pancakes

  • Eggs – 4 pcs
  • Melted butter – 60 gr
  • Milk – 300 ml
  • Warm water – 300 ml
  • Sugar – 2 tbsp
  • Salt – a pinch

Ingredients for the filling

  • Minced meat – 600 gr
  • Onion – 1 pc
  • Carrots – ½ pc
  • Tomato paste – 2 tbsp
  • Water – 50 ml
  • Salt
  • Pepper

Method of preparation

1. Mix all the ingredients for the pancakes so that there are no lumps and leave for 10 minutes.

2. Bake the pancakes on both sides until cooked.

3. Dice the onion and grate the carrots on a fine grater.

4. Fry in a frying pan with vegetable oil.

5. Add the minced meat, salt, pepper, 2 tbsp of tomato paste and water. Simmer until tender.

6. Add buckwheat to the filling and mix thoroughly.

7. Cut the pancake into 4 pieces and put the filling on each.

8. Wrap the mini-pancake and serve.
