Delicate tangerine crème brûlée: a mouthwatering winter dessert
Crème brûlée is one of the world's most popular desserts, developed by French chefs. It is a delicate custard with a caramel crust. It can even be served frozen, so it is often referred to as ice cream.
A food blogger with the nickname baking and more4u recently shared how to make tangerine crème brûlée on TikTok. The result is an unusually delicious winter dessert.
Ingredients
- 33% cream - 500 ml
- egg yolks - 4 pcs
- sugar - 80 g + for the crust
- zest of 2 tangerines
Method of preparation
1. Combine cream, half the sugar, and zest of two tangerines in a saucepan, put on medium heat and bring to active steam stirring constantly (but do not boil). Remove from heat and cover to let the cream flavor with the zest.
2. Mix egg yolks with the other half of the sugar until it dissolves. While stirring, add the hot cream in a thin stream and strain the cream through a sieve (to get rid of the zest) into a container with a spout.
3. If there is foam, remove it and pour the cream into the molds to 3/4 of the height. Put them on a baking sheet or in a deep mold, pour boiling water 1.5-2 cm deep, and put them in the oven. Bake at 150 degrees for 30-40 minutes. The center of the dessert should tremble.
4. Cool to room temperature and refrigerate for 3-4 hours.
5. Sprinkle the dessert with sugar, forming an even layer. Heat with a kitchen burner or put under the grill, preheated to 200 degrees for 2-3 minutes until a golden sugar crust forms.
