Ancient Ukrainian millet porridge kruptsi: how to prepare an authentic dish

Kruptsi is a dish that has been known to Ukrainians for over 300 years. It used to be cooked for weddings, christenings, and other important events.

In the past, only wealthy people could afford porridge made of millet, flour, and a large number of eggs. Housewives would roll millet grains in eggs and flour to the size of peas. They kept ket the porridge dry. And when they needed it, they would start cooking right away. Unisg shares how to prepare tradidional Ukrainian porridge kruptsi.

Ingredients

  • millet - 100 g
  • eggs - 10-15 pcs
  • water
  • flour - 1 g

Method of preparation

1. Pour millet in a deep bowl and gradually add 1 tbsp of beaten eggs and flour.

2. Rub the eggs into the flour for 2-3 hours until the millet grain is rolled into the dough and becomes the size of a pea.

3. Dry the finished cereals on a cloth.

4. Cook the porridge in water or broth in a 1:3 ratio for 2.5 hours.

5. Add salt, pepper and bay leaves. Serve with butter and cracklings.
