What is tarator and how to cook it: recipe for a delicious soup in 15 minutes

Tarator is a national Bulgarian soup. Its peculiarity is that it is served cold, so there is no need to cook anything. It is somewhat reminiscent of okroshka, but it is much easier and faster to prepare. Just 15 minutes and you will enjoy a delicious dish.
Food blogger Natalia Hoptarenko (goptarenkonatali) shared a recipe for cold tarator soup that doesn't require boiling on her Instagram page.

Ingredients:
- cucumber - 2 pcs.
- kefir 2.5% - 0.5 l
- dill - a few sprigs
- garlic - 1 clove
- olive oil - 2-3 tbsp
- roasted walnuts
- salt
Method of preparation:
1. First, wash cucumbers and grate them on a coarse grater.
2. Wash and chop dill as well.

3. Peel and squeeze garlic through a press.
4. Mix cucumbers, dill and garlic, season with salt and leave for 10 minutes.
5. When the time is up, pour cool kefir over.

6. When serving, sprinkle with chopped nuts and drizzle with olive oil. Enjoy!
