Pea soup with ribs: how to cook the dish in a new way
Pea soup is a very satisfying and healthy first course. To add a new flavor, you can add smoked ribs instead of the classic meat. Despite the fact that they make the soup more fatty, it turns out to be very tender and flavorful.

Ingredients:
- smoked ribs - 400 g
- peas (split) - 230 g
- potatoes - 3 pcs
- carrots - 1 pc
- onion - 1 pc
- parsley root - 150 g
- garlic - 2 cloves
- water - 1.2 liters
- salt, pepper
Method of preparation:
1. Soak the peas in cold water for at least 1 hour in advance.
2. Cut the ribs into portions. Put them together with parsley roots in a saucepan, cover with water and cook over low heat for 30 minutes.
3. Chop the onion and grate the carrots.
4. After the ribs are cooked, remove the parsley root and add the peas, onions, and carrots. Add salt and cook for 50 minutes.
Important: the better the peas are cooked, the more tender the soup will be.
5. Dice the potatoes and add to the soup, cook until tender.
6. Chop the garlic and add 5 minutes before the end of cooking. Add salt and pepper if desired.
