What to make with expired kefir, besides pancakes: chocolate muffins from Liza Hlinska

It's not uncommon for fermented milk lovers to find slightly expired kefir in the fridge. Of course, it is no longer suitable for consumption in its pure form, but why not cook something really tasty with it?

The first dish that comes to mind is pancakes. But they're not the only things you can make with kefir. For example, food blogger Lisa Hlinska shared a recipe on Instagram for muffins that everyone will love and won't have to throw away.

Ingredients:

  • Flour - 250 gr
  • Sugar - 100 gr
  • Cocoa powder - 50 gr
  • Baking powder - 8 g
  • Salt - a pinch
  • Soda - 1/3 tsp
  • Eggs - 2 pcs
  • Butter - 100 g
  • Kefir - 200 ml
  • Dark chocolate - 80 gr

Method of preparation:

1. Combine flour, baking powder, baking soda and salt. Mix well.

2. Add cocoa through a sieve and mix.

3. Mix the eggs, sugar, kefir, or yogurt, melted hot butter, and stir.

4. Add the dry part, and mix to moisten all the flour.

5. Add the chocolate pieces and mix.

6. Fill the molds with the dough, filling 2/3 of the height.

7. Put in a preheated 180C oven for 18-20 minutes. Check for doneness with a wooden skewer.

8. Remove the molds from the cooled muffins.
