What to make from pumpkin for lunch: a variant of a delicious autumn side dish

Seasonal pumpkin can be used to make a very satisfying dinner. Just simmer the vegetable with sour cream sauce and garlic. This dish will go well with your favorite meat or can be eaten on its own.

The idea of cooking baked pumpkin in sour cream was published on the Instagram page of food blogger Olena Mazur (lenna mazur). All the benefits of the fruit remain.

Ingredients:

  • pumpkin – 400 g
  • sour cream 10% – 2 tbsp
  • garlic – 3-4 cloves
  • herbs (dill/parsley) – 3-4 branches
  • oil – 1 tbsp
  • salt, and pepper to taste

Method of preparation:

1. Cut the pumpkin into large cubes.

2. Put the pumpkin in a preheated frying pan with oil, add salt and pepper.

3. While the pumpkin is frying, mix sour cream, garlic, chopped herbs, and sour cream in a small bowl.

4. Mix well.

5. When the pumpkin is slightly golden, pour sour cream over it.

6. Mix well and simmer until tender over low heat under a lid.

7. Do not overcook, or the pumpkin will turn into mashed potatoes.

8. The cooking time depends on the type of pumpkin and the size of the cubes.
