Ingredients:
- pumpkin - 250 g
- cottage cheese - 100 g
- baby spinach - 200 g
- pumpkin seeds - to taste
- rosemary - 1 sprig
- balsamic vinegar - to taste
- salt - to taste
- ground black pepper - to taste
- olive oil
- Provencal herbs - optional (sprinkle on top)
Method of preparation:
1. Put the peeled and diced pumpkin on a baking sheet, drizzle with olive oil, and add a sprig of fresh rosemary.
2. Bake at 180 degrees until tender (15-20 minutes depending on the type of pumpkin).
3. Cut the blue cheese with mold.
4. Mix olive oil with salt, pepper and balsamic vinegar.
5. Mix the spinach leaves with the sauce and place on a plate.
6. Top with pumpkin slices and cheese, sprinkle with seeds or nuts.
