Walnut cake is a great dessert for a cozy family tea party. The best option is to make it on sponge cake dough - the texture will be soft and very tender. The cream can be made with dates.

Ingredients for the sponge cake:
- egg - 3 pcs.
- kefir - 50 g
- rice flour - 50 g
- corn starch - 40 g
- baking powder - 5 g
- sweetener - to taste
- walnuts - 30 g
Ingredients for the cream:
- dates - 100 g
- natural yogurt - 250 g
- cream cheese - 170 g
- sweetener
- almond petals - 50 g

1. For the sponge cake, separate the egg whites from the yolks.
2. Mix the yolks, kefir, and sweetener.
3. Add flour, starch, chopped nuts and baking powder.

4. Beat the egg whites until soft peaks form, gently fold into the mixture.
5. Preheat the oven to 180 degrees.
6. Bake the sponge cake for 30-35 minutes. Check for doneness.

7. Pour boiling water over the dates.
8. If they are soft – for 1-2 minutes, hard – for 10-15 minutes.
9. Pit the dates, and beat in a blender with cream cheese, sweetener, and yogurt.

10. Cut the sponge cake into 3 layers. Layer: sponge cake, cream, sponge cake, etc.

11. Refrigerate for 2-3 hours or overnight.
12. Decorate the cake as desired. Sprinkle with almond petals.
