Liver cake is a dish that everyone has known since childhood. It used to be on almost all holiday tables. And the New Year's feast was not complete without this delicious and interesting-looking appetizer.
On Instagram, chef Volodymyr Yaroslavsky offered to recall the taste and technology of making liver cake. He also revealed the secret of how to create this dish so that it is lump-free and bitter.
Ingredients for the cakes for a d 26 cmshape
- Chicken liver - 600 g
- Milk - 220 ml
- Eggs - 3 pcs.
- Fried onion - 120 g
- Flour - 110-120 g
- Salt
- Pepper
- Oil - 30 ml
Ingredients for the filling
- Carrots - 300 g
- Onion - 300 g
- Processed cheese - 200 g
- Homemade mayonnaise - 350 g
Ingredients for mayonnaise
- Yolks - 2 pcs.
- Oil - 330 ml
- Mustard in grains - 40 g
- Sour cream - 60 g
- Salt - 1 g
- Pepper
- Apple cider vinegar / lemon juice
The way of preparation
1. Chop the carrots and onions and fry lightly: carrots until soft, onions until transparent and slightly colored.
2. Sort the chicken liver and remove the connecting film.
3. In a food processor, blend the liver, milk, eggs, and fried onions until smooth. Add salt, pepper, flour, and finally oil. Mix everything until smooth.
4. Cook thin pancakes over medium heat, do not overcook, make sure that the edges of the pancakes are not too thin.
5. Grind the fried onions and carrots to a state of "caviar", add grated melted or hard cheese and mayonnaise. Divide by the number of pancakes.
6. Combine all the ingredients for the mayonnaise in a blender bowl and beat thoroughly.
7. Assemble the cake.
8. For decoration, use three boiled eggs and herbs.
