Tastier than pepper: stuffed beets with meat filling
Beetroot is a valuable and healthy vegetable that can be the basis for delicious and satisfying salads, appetizers, and sauces. Beets can be stuffed with meat, vegetables, rice, and bulgur.
The cook shared a recipe for delicious stuffed beets with minced meat and vegetables on Instagram.
Ingredients:
- Beets – 8 pcs. medium
- Onion – 1 pc.
- Oil – 2 tbsp.
- Minced meat – 300 g
- Salt and pepper
- Rice – 100 g
- Celery with herbs – 4 stalks (about 50 g)
- Juice of 1 lemon
- Savoy or ordinary young cabbage – 250 g
- Water – 400 ml
Method of preparation:
1. Peel the beets, wrap them in foil, and bake in a preheated 200°C oven until tender (about 1-1.5 hours). Or you can boil them. Then peel out the center of the beets and chop them.
2. Fry the chopped onion in oil in a preheated frying pan. Add the minced meat, salt, and fry until cooked.
3. Add the washed rice, chopped celery, half of the beetroot, juice of 1/2 lemon, salt and pepper, and mix. The sauce should be sweet and sour. Therefore, if the beets are very sweet, add more lemon juice.
4. Chop the cabbage and celery, put it in the pot where the beets will be stewed, and add the rest of the beet centers.
5. Stuff the beets with the prepared mixture, put them on the cabbage, salt, and add lemon juice and water. Cover and simmer over low heat until tender (about 1 hour).
