Spectacular "Red Velvet" cheesecake: a dessert that will impress all your guests
The "Red Velvet" cheesecake is a very delicate and spectacular dessert that you can easily prepare at home. You can make a bright color of the base with ordinary food coloring, and there will be a fluffy cheese layer on top. Such a delicacy will impress all your guests.

Ingredients for the base:
- flour – 10 g
- baking powder – 0.5 tsp.
- cocoa – 1 tsp.
- sugar – 100 g
- vanilla sugar – 1 tsp.
- a pinch of salt
- kefir – 100 ml.
- vegetable oil – 90 ml.
- eggs – 1 pc.
- red food coloring
Ingredients for the curd layer:
- cream cheese – 500 g
- sour cream – 120
- eggs – 2 pcs
- sugar – 120 g
- vanilla sugar – 1 tsp.
- lemon juice – 1 tsp.
Method of preparation:
1. Preheat the oven to 150 degrees (top-down mode without convection).
2. Put all the ingredients for the curd layer in a bowl and mix well, breaking up all the grains.
3. For red velvet, put the flour, baking powder, cocoa, salt, sugar, and vanilla sugar in a separate bowl and mix together.
4. Add the liquid ingredients: kefir, egg, oil.
5. Beat with a mixer for several minutes until fluffy and homogeneous, and add red food coloring.
6. Add enough to make the color a deep red. Mix with a mixer.
7. Cover the bottom of the baking ring tightly with foil.
8. Pour the base first, and then carefully spoon in the curd mixture.
9. Put in the oven to bake for an hour and a half.
10. The finished cheesecake should be well set on the sides and slightly shaking inside.
11. Turn off the oven and let the dessert cool completely in the oven.
12. Leave the oven door slightly ajar. Then put in the refrigerator for at least 6 hours.
